GLENS FALLS | Davidson Brothers Brewpub employees got their first paychecks with “commissions” rather than tips Thursday — and none of them walked out in disgust. Davidson Brothers banned tips on Jan. 1, replacing them with an 18 percent mandatory surcharge in response to the minimum wage hike. “Considering how slow we were, I think it was a really good paycheck.”At other restaurants nearby, servers are certain that Davidson Brothers employees are losing money. The kitchen staff at Davidson Brothers make about $12 an hour — while the servers make about $24 an hour, Davidson Brothers chef Jarid Vanness said. Then Davidson proposed banning tips, using the surcharge to pay servers and then later using increased profits and possibly small price increases to pay the kitchen staff more.
