SR matters in the sense that every team should try and score at least at 3.5 runs an over but again it shouldn't be for the sake of doing it which would get you in trouble if you aren't skilled enough to do that. Winning a game by batting quickly comes about very rarely in Test cricket, most of the times a batter's role is to set up a game which needs a good mix of attack and defence.
