I think it may just be that I had a really lovely summer this year. With fall fast approaching, I felt inspired to make something this week that really captured the summer vibe — something that really screams summer to me personally. That being said, I decided to finally make the pepperoncini chicken salad that I saw recipe developer Sara Tane post to her Substack account a few months ago. I couldn’t stop thinking about this chicken salad recipe — my love for chicken salad and pepperoncini made it love at first sight, which I instinctively knew was bound to become love at first bite.
