I am head chef, kitchen manager, line cook, baker and, last but not least, head kitchen porter! I have picked up something useful from every kitchen I’ve been around and from every person I’ve seen cooking - except if they were really bad at it. My mother was not a particularly good cook but her cabbage rolls were always on point, so the standard was really high. I love cooking seasonally, and I love to cook things from simple ingredients that rely entirely on seasoning and correct execution.
