The lone Minnesota location, in Apple Valley, has been drawing crowds who have been scooping up chicken salad as fast as they can make it. A dozen varieties of chicken salad are made fresh each morning, starting with chicken tenders, special seasoning and Duke's mayonnaise. A selection of regular-size plates at Mo' Bettahs included most of the menu's proteins: chicken teriyaki, steak teriyaki, chicken katsu, steak teriyaki and shrimp tempura.
