‘Oyster Cartel’ restaurant now open on Hwy. 19Posted on August 7, 2026The Oyster Cartel — located in Nature Coast Plaza on U.S. 19 (S. Byron Butler Parkway) across from owner Luis Bautista’s other restaurant Old Mexico — held a “soft opening” Thursday and will officially open Friday, Aug. 7, serving up raw and baked oysters as well as a diverse drink menu. Taylor County residents will have a new dining option starting this Friday, Aug. 7, with the official opening of Oyster Cartel located inside Nature Coast Plaza at 2286 South Byron Butler Parkway in Perry.
