Potassium sorbate was associated with a 14% higher incidence of cancer overall and a 26% higher incidence of breast cancer among participants with higher exposure compared with those with lower or no exposure. Potassium metabisulphite, a sulphite preservative, was associated with an 11% higher incidence of cancer overalland a 20% higher incidence of breast cancer. Potassium nitrate was associated with a 13% higher incidence of cancer overall and a 22% higher incidence of breast cancer. Researchers also found associations involving acetates, with higher intake linked to a 15% higher incidence of cancer overall and a 25% higher incidence of breast cancer. Finally, sodium erythorbate was associated with a 12% higher incidence of cancer overall and a 21% higher incidence of breast cancer.
