Wild rice, which is unique to North America, is not a true rice but the seed of a wild grass. Add rice and cook covered at a simmer over medium low heat for 15 minutes or until liquid is absorbed. The ratio of rice to liquid is 1 rice to 1 1/2 – 2 cups liquid for long grain rice depending on desired texture. Some chefs will cook rice in a large volume of lightly salted boiling water until it’s cooked to the desired texture. Add rice and continue to cook and stir until rice just begins to color.
