A group of researchers has published a framework in Nature Communications setting out why fermentation-derived microbial proteins remain a niche food category and what would need to change for them to reach everyday shelves.
The authors organize the transition into three stages: a novelty barrier, early trust-building, and mainstream normalization.
Each is tied to specific engineering, regulatory, and market levers rather than treated as a matter of gradual consumer warming.
These push microbial proteins to a price disadvantage against conventional agricultural proteins and delay the point at which they can compete on shelf price and product range.
“Ultimately, advancing microbial protein requires an interdisciplinary approach,” the authors write, calling for microbial engineering to be coupled with “food sociology, behavioral science, and strategic communication design.”
