A local European-style bakery chain is transforming a former Columbia brewery into a home base to fuel its plans for rapid growth. Roggenart European Bakery, Bistro & Cafe plans to finish a central commissary and corporate headquarters by the end of the year at 9570 Berger Road, according to owners Nemanja “Nem” Popov and Brody Tennant. The 11,000-square-foot commissary will add to the bakery’s current production facility in Savage Mill, which is around 4,500 square feet and also houses a shop. He and Popov hope to start construction in the coming weeks, and expect the buildout to take three to four months.
