Washington DC company Proxy Foods AI has raised $6 million in a seed round for its artificial intelligence platform for food and beverage research and development. Proxy Foods AI previously raised $2.3 million in a 2024 seed round also led by Leonsis. Proxy Foods AI reports that customers have cut development iterations by 80%, reduced cost of goods in reformulations by between 2% and 10%, and compressed prototype timelines from months to days. Research partnerships and encrypted computationProxy Foods AI has established collaborations to develop the formulation science behind the platform. The company projects that nine in ten food companies will use AI in product development within five years.
