St Nicholas Sandwich Shop in Ipswich, which is known for its thick focaccia sandwiches and salads, has been sold. It has now been announced that Ben and Karen Stamp, who also run Cookie Barista, are the new owners. The cookie, coffee and bubble tea business has sites in Bury St Edmunds, Felixstowe and Ipswich. In a post online, Mr Stamp said: "I have been an admirer of Andy & Katrina at St Nicholas Sandwich Shop - seeing their business thrive over the last 3 years. "I am looking forward to reopening on the 1st September and I would love to see all the regular customers ordering their favourite focaccia sandwich and hopefully I will do Andy & Katrina proud!"
