COOKBOOK CONFIDENTIAL Bert Greene’s Pasta Salad from the kitchen of Neil Fox
['Neil Fox', 'Written By']
The Berkshire Edge
This one is about Bert Greene, a larger than life chef, food writer, columnist, sometimes playwright who I came to know in the 60’s.
Bert Greene opened The Store, located in Amagansett, Long Island in 1966, reputed to be the first take-out gourmet food store in America.
Bert referred to his store as being “smaller that a NYC Checker cab” – not far from the truth.
The Store’s prepared food cases displayed gorgeous baked ham, roast beef and chicken, chilled shrimp, inventive salads including my favorite: Bert’s Pasta Salad.
Add onion, cucumber, pickles, snap peas, baby peas, sweet pepper, shallots, chives, and scallions.
