Philip Simmonds, 57, of owner of Cafe Monde in The Square, is accused of arson being reckless as to whether life was endangered.
The fire at Cafe Monde spread to several other historic buildings on Monday July 6.
More than 50 firefighters and ten fire engines were sent to tackle the blaze.
Simmonds, of Farm House Close, Stubbington, Fareham, was not asked to plead during a 15-minute hearing.
Judge James Bromige adjourned the hearing and set a provisional date for a four to five-day trial set for Winchester Crown Court on January 11.
