"Leading my hometown volleyball program had been a dream of mine since college, so when the opportunity came up, I knew I had to go for it," said Mehring, the head coach of the Carrington High School volleyball team. She played for the Carrington volleyball team while she was in high school. Throughout Mehring's college volleyball career, she helped coach younger girls during University of Jamestown Jimmie Volleyball Camps. She also acted as an assistant coach for the Jamestown High School volleyball team during the 2023 season. Mehring entered her first year as head coach after one year as one of the assistant coaches for the Carrington varsity volleyball team.
