Olive & Finch Collective – the independently owned and operated group behind Olive & Finch and Little Finch – opened its second Little Finch location in the cafe space at CSU Spur on Oct. 1. Like the original Little Finch on 16th Street in downtown Denver, the counter-service café will offer craft coffee, cocktails, cold-pressed juices and pastries. Additionally, Little Finch will collaborate with the CSU Spur campus events team, providing pastries, beverages and bartending services for events all around campus and supporting CSU Spur’s mission to connect urban and rural communities through education and special events. “The CSU Spur campus has become a hub for innovation, education and connection,” said Olive & Finch Collective founder and president Mary Nguyen. “Most importantly, Little Finch aligns with the values of the CSU Spur campus.
