Park City’s food scene has a new flavor of home cooking thanks to La Finca Mexican Cuisine, a local family’s new food truck parked just off Old Highway 40. Alongside sisters Mónica and Sandra, nieces Carla and Fernanda lend a hand, and Edgar, Sandra’s son and co-owner, helps keep the operation running. Although their food truck is new, they are already known within their community for selling enchiladas and other dishes from their home kitchen over the past 10 years. A defining feature of La Finca is its handmade tortillas. Beyond feeding Park City’s workers and families, the food truck has also started catering private events.
