Jp McMahon Opens New Ramen And Bao Bar, Kombu, In Galway

Award-winning chef Jp McMahon has announced the opening of Kombu, in Galway, which endeavours to serve a flavour-driven menu rooted in the traditions of Japanese street food.
The new restaurant, on Druid Lane, will offer a casual-style experience, featuring steaming bowls of ramen, teriyaki, tempura, rice dishes, and a selection of bao buns, as well as desserts.
The concept was developed by McMahon, with a kitchen led by chef Gabriel Hoefling Ossani, who has worked alongside the former at the Michelin-starred Aniar.
“Japanese cuisine has inspired how we cook in Aniar, influencing our approach to fish and vegetables, with a strong focus on seaweed and sea herbs, which results in contemporary Irish cuisine,” said McMahon.
“Kombu is different in many ways, yet also similar.
