Charles Colman Boulevard (often called “The Boulevard” by locals) is Pawling’s quaint main street, a barely two-block stretch of modest restaurants and small businesses. Cornerstone Restaurant & Bar at 146 East Main Street opened on Jan. 1 of this year, and last Saturday night it was absolutely packed with diners. In the Hudson Valley, many restaurants will tell you they’re farm-to-table and their ingredients are locally sourced. Attentive service is to be expected at upscale restaurants, but here again, Cornerstone takes it to the ultimate level. Chef Harris Mayer, a big name in NYC dining, has knocked it out of the park here.
