I’ve reviewed something similar before — Jennifer Garner’s chicken enchiladas — and Gaines’ version is in roughly the same universe, though this one inches closer to more recognizable Mexican flavors thanks to the inclusion of enchilada sauce.
That said, it’s still very much Mexican-inspired, especially if you’re used to bolder, spicier enchiladas (like The Kitchn’s Mexican enchiladas with a sauce made from dried chiles).
The dish has zero heat, even with the diced green chilies, and is mild to the point of being almost sweet.
